I’m in the midst of doing the Whole 30 plan with a group of supportive friends. And man, you never realize how much you like certain foods until someone tells you they’re off limits for a month!
I’m doing this plan for 5 reasons:
1. I like a good challenge. I’m not competitive in general, but I like to put myself to the test from time to time.
2. A friend asked me to do it with her and I’m a big believer in supporting and loving our friends in all the ways we can. I don’t get to spend as much time with her as I’d like, and I am simply way too busy to be the kind of friend I’d like to be, but I can do this.
3. I want to purge my body of The Holidays.
4. I want to heal my gut.
5. I want to grow closer to God. This is a sort of a fast for me. Perhaps it sounds silly to some, but it is HARD to give up foods I like. It is HARD to watch the rest of my family eat chips and salsa and walk away. I know that when times are tough I am more prayerful. I tend to not only pray for help, but I also remember to actually THANK God. I notice all that I have much more vividly when I’d be knocking through without His help.
But.
I still want a brownie.
But.
I don’t want to fall off the Whole 30 wagon!
So, right now I’m grateful for the creative mind God gave me that allowed me to conjure a brownie I can eat and not cheat. ![]()
Ingredients
- 1 cup unsweetened coconut
- 1 tablespoon organic extra virgin coconut oil
- 1 tablespoon unsweetened cocoa powder
- 3 dates, pitted
Instructions
- Put all ingredients into a strong blender or food processor and blend until smooth.
- Transfer to a small glass dish or bowl and chill for ten minutes.
- Slice and enjoy!
