Quinoa Horchata

Here’s a quick festive little weekend recipe for you! Quinoa Horchata 1 2/3 cups cooked quinoa 3 cups filtered water 1 can coconut milk 1 teaspoon vanilla extract 1 rounded teaspoon ground cinnamon honey or organic granulated sugar, to taste (I used about 1/4 cup) Pour everything into a blender and blend until smooth and creamy.  Chill, then serve over ice. Enjoy!  Have a happy Cinco de Mayo!

Fruit Tacos

Happy Cinco de Mayo! My little people and I celebrated today by whipping up some these delicious and easy fruit tacos.
